McGraw collected recipes from handwritten books, diaries, scrapbook clippings, and out-of-print cookbooks from the University of Kentucky Libraries Special Collections to bring together a variety of classic dishes, complete with descriptions of each recipe's origin and helpful tips for the modern chef. The authors, who carefully tested each dish, provide recipe modifications and substitutions for rare and hard-to-find ingredients. This entertaining cookbook also serves up famous Kentuckians' favorite dishes, such as John Sherman Cooper's preferred comfort food (eggs somerset) and Lucy Hayes Breckinridge's "excellent" fried oysters. The recipes are flavored with humorous details such as "[for] those who thought they could not eat parsnips" and "Granny used to beat 'em [biscuits] with a musket." Accented with historic photographs and featuring traditional meals ranging from skillet cakes to spaghetti with celery and ham, The Historic Kentucky Kitchen presents a novel and tasty way to experience the history of the Bluegrass State.

Description : Although the majority of libraries in the state of Kentucky did not offer services to African Americans between the years 1860 and 1960, public libraries did employ them. The Louisville Public Library, a leader in the development of library management and education from 1905 to 1925, began in 1912 offering classes to train African American women to be librarians in segregated public library branches that were opening in the South. In 1925, an academic library program was developed for African Americans at the Hampton Institute in Virginia to continue the work that began in Kentucky. This movement culminated with Helen F. Frye's becoming the first African-American to graduate with a master of science degree in library science from the University of Kentucky Library School in 1963. This work moves from the provision by Berea College of the first library services to a fully integrated student body in 1866 through the integration of the state's only accredited library science program at the University of Kentucky in 1949 to the civil rights initiatives of the 1960s. Also addressed are the interconnectedness of libraries and societal events and how one affected the other.

Description : Kentucky occupied an unusual position with regard to slavery during the Civil War as well as after. Since the state never seceded, the emancipation proclamation did not free the majority of Kentucky's slaves; in fact, Kentucky and Delaware were the only two states where legal slavery still existed when the thirteenth amendment was adopted by Congress. Despite its unique position, no historian before has attempted to tell the experience of blacks in the Commonwealth during the Civil War and Reconstruction. Victor B. Howard's Black Liberation in Kentucky fills this void in the history of slavery and emancipation. In doing so, however, he does not just chronicle the experiences of black Kentucky, because as he notes in his introduction, "such a work would distort the past as much as a book concerned solely with white people." Beginning with an overview of the situation before the war, Howard examines reactions to the emancipation proclamation and how the writ was executed in Kentucky. He also explores the role the army played, both during the war as freed black enlisted and after the war as former slaves transitioned to freedom. The situation for former slaves in Kentucky was just as precarious as in other southern states, and Howard documents the challenges they faced from keeping families together to finding work. He also documents the early fights for civil rights in the state, detailing battles over the right to testify in court, black suffrage, and access to education. As Black Liberation in Kentucky shows, Kentucky's slaves fought for their freedom and rights from the beginning, refusing to continue in bondage and proving themselves accomplished actors destined to play a critical role in Civil War and Reconstruction.

Analyzing the historical importance of a wide range of publications, from the nonprofit and charity cookbooks that flourished at the end of the twentieth century to the contemporary cookbook that emphasizes local ingredients, van Willigen provides a valuable perspective on the state's social history.

Description : During the eight decades preceding the Civil War, Kentucky was the scene of tremendous building activity. Located in the western section of the original English colonies, midway between North and South, Kentucky saw the rise of an architecture that combined the traditions of nationally known designers, eager to achieve the refinements of their English mother culture, alongside the innovativeness and bold originality proper to the frontier. Tradition thus provided a tangible link with world architectural development, while innovation offered refreshing variations. The result was a distinctive regional architecture. In his newest look at Kentucky architecture, Clay Lancaster broadens his scope to include analyses of significant structures from throughout the commonwealth, illustrating the entire range of stylistic development. Like his acclaimed earlier book Antebellum Houses of the Bluegrass, the current volume provides historical background as well as drawings, photographs, and floor plans, showing both general features and details. Among the many Kentucky buildings discussed are examples by such well-known early American architects as Benjamin Henry Latrobe, Thomas Jefferson, James Dakin, Isaiah Rogers, Alexander J. Davis, and Francis Costigan, as well as the work of local master builders such as Matthew Kennedy, Micajah Burnett, Gideon Shryock, Thomas Lewinski, and John McMurtry. Also included are Kentucky buildings designed from nationally distributed architectural books and builders' guides. Lancaster gives special attention to the Geometric Style, which evolved further and produced more noteworthy monuments in Kentucky than anywhere else in America. Such buildings, in turn, bestowed a simplicity and straightforwardness on structures in later styles. As Lancaster shows, the architecture that resulted from Kentucky's fertile eclecticism constitutes a rich and rewarding architectural heritage. All lovers of fine architecture will treasure this handsome and informative book.
